Craving a little bread every now and then but worried about your protein intake? Check out this homemade oatmeal bread recipe. With simple ingredients and without the additives and sugars found in store-bought bread, this VALIDUS oatmeal bread packs an impressive 60 grams of protein per loaf.

Ingredients

  • 4 eggs
  • 400g cottage cheese
  • 400g oats
  • 2 teaspoons baking powder
  • 1 teaspoon salt

Instructions

  1. Prepare the Egg Mixture : Place the 4 eggs in a bowl, add the baking powder and mix very well. Then add the salt and continue stirring until everything is well incorporated.
  2. Add Cottage Cheese : Add the cottage cheese to the egg mixture and stir until it forms a thick mixture. It is normal to still see bits of cottage cheese in the mixture. You can use a mixer if you prefer, but mixing by hand works well.
  3. Add the Oats : Add the oats to the mixture and mix with your hands. Squeeze the dough well to ensure it is firm and sticky.
  4. Form the Buns : Divide the dough into 6 balls. Flatten each ball between your hands so that it resembles a thick hamburger patty.
  5. Prepare the Baking Sheet : Place the loaves on a baking sheet or baking sheet. If you are not using a nonstick baking sheet, lightly grease the baking sheet with butter.
  6. Baking : Preheat the oven to 200 degrees Celsius and bake the loaves for 30 minutes.
  7. Serve : Enjoy an amazing breakfast bagel. They’re heavy, filling, and packed with protein. I use half a bagel at a time, so this recipe makes enough bread for a week. Best of all, you know exactly what’s in it.
